Melt the white chocolate:
In a microwave-safe bowl, combine the white chocolate chips, butter, lemon zest, and fresh lemon juice. Microwave in 30-second intervals, stirring after each, until the mixture is smooth and melted. If desired, add a few drops of yellow food coloring for that lemonade hue.
Coat the cereal:
In a large mixing bowl, place the Rice Chex cereal. Pour the melted white chocolate mixture over the cereal and gently toss until each piece is fully coated.
Add strawberry and powdered sugar: In a separate large zip-top bag or bowl with a lid, combine the powdered sugar and crushed freeze-dried strawberries. Transfer the coated cereal to the bag or bowl, seal, and shake until the cereal is evenly coated in the strawberry-powdered sugar mixture.
Cool and add candy melts:
Spread the coated cereal on a baking sheet to cool for about 15 minutes. If desired, melt the pink candy melts, drizzle over the cooled puppy chow, and let it set before serving.
